They are like Memphis, they know they're playing in a weak conference so they have to load up in the OOC portion of the schedule in order to have quality win opportunities to build their resume and SOS. If they didn't have a strong OOC schedule, they would be limiting their potential seed in the tournament.
Yes, I'm fully aware teams from non-major conferences (at least ones who have legit at-large/high-seeding hopes) need to schedule differently than those from the big-boy leagues. As you pointed out, the Gonzagas of the world have less opportunities for quality wins on their conference schedule. Common sense.
Even so, Gonzaga has become the clear standard-bearer for scheduling among non-BCS schools. Certainly Memphis, Xavier, and Long Beach State (to name a few) are on that short list, though I wouldn't quite put LBSU in the same category because it's not a legit at-large hopeful year in & year out like the others.
