I've seen many people complain about the "weave". The weave at the top of the key is a play to start the ball moving and has many variations.

Here is Golden State running the weave with many different scoring plays.

The difference between the Gophers "weave" and Golden State's is that ours appears to have no purpose other than to run down the shot clock to create a desperation forced shot.

The bigs handling the ball in the video you linked are usually either Draymond Green or Andrew Bogut who are both very good passers for their position in the NBA (or in Bogut's case was as he's no longer in the league). That's a very different thing than Jordan Murphy or Daniel Oturu handling the rock. Then you have the issue that the Golden State weave is taking place outside the NBA 3 point line which is allows for more spacing than just outside the NCAA line (and then Klay and Steph need to be guarded 3-4 feet beyond that line). The Gophers have two passers (Dupree and Amir) and one shooter (Gabe) while the Warriors have at least 3 passers (Steph, AI, Bogut or Green, etc) and 2-3 shooters (Steph, Klay and KD for the years he is on the team). If Amir or Dupree takes the weave from a Jordan or a Daniel there is no need to honor the pull up 3 like you see the defense doing in the Golden State video for Klay and Steph. If the defender can just go under the hand off with no repercussions, it takes some options away including the big rolling down the lane. There is also a noticeable difference in urgency with the way the Golden State players come to the ball at the arc and the way the Gophers do.

It's certainly a viable option as part of an offense, but the Gophers simply don't run it well. Part is personnel and part is execution.
