I was just there last week-end. I watched the Gopher game in my room since it was on ESPN and it was 9 freaking AM.
However, for NFL, I know the Hilton has a large theatre they turn into several giant big screens. It's really cool and smoke free. I don't know if they do this for college games or not.
There's also a 'locals' casino called Sam's Town off the strip. It's very nice with movie theatres and resteraunts etc. all within the casino. They have an awesome sports book with like 15 huge big screens. If you have a car I'd try that. They do have a shuttle to the strip but I have no idea where on the strip you'd need to go to catch it. Next time I go to Vegas I'm going to try and stay there, though I don't know what it runs compared to the other stuff.
Every major casino on the strip has a sports book with enough TV's to show all the games. But usually only a couple big screens, meaning the Gophers get relegated to the little TV in the corner. And if you don't smoke it's usually pretty uncomfortable.
ESPN Zone is OK, but the food is over-rated and they usually have a minimum amount per hour that you have to order. I'd go elsewhere.
Also, if you're there before 1 AM or so on Friday night, and you want to bet, do it then. First, you won't feel like getting up at 8 AM to go place wagers, and even if you make it there in time, there's always a mad rush at about 8:50 to get bets in on the early games.
