Seems like the refs properly applied the rule. I'm not sure I agree with the rule itself because the tackle in each of these examples wouldn't have been made without grabbing the collar, but I guess since the rule is a safety precaution as much as anything I can make sense of it.

Correct. It has nothing to do with the defensive player gaining an advantage. Horse collar tackles have ended offensive players careers. The most notable case was Gerald Wilhite after a horse collar tackle by Joey Browner on MNF.
